At La Grand’Vigne, gastronomy is very much of the moment, experienced with awareness. Chef Nicolas Masse composes his dishes as one would assemble a Grand Cru, with every action in the kitchen guided by respect for nature.

The Chef carefully selects his suppliers and offers exceptional products sourced exclusively from Nouvelle Aquitaine, embracing a locavore approach.

The menu proudly features vegetables from our organic garden, located just outside the restaurant, where all kinds of fruits, vegetables, and herbs flourish—from the most common varieties to the rarest.
Seafood is sourced from sustainable fisheries, and only one meat dish is presented, with its portion size carefully controlled and thoughtfully designed to balance pleasure with a reduced environmental impact.

Nicolas Masse’s brigade works in an ethos of sharing and perfection. Balance, lightness, and precision are the guiding principles of a culinary composition that continuously evolves in tune with the surrounding nature.
