In the manner of a winemaker, Chef Nicolas Masse composes his dishes as one assembles a Grand Cru. He carefully chooses his suppliers and offers exceptional products, favoring a locavore approach as much as possible. The Chef’s permaculture vegetable garden supplies the kitchens. There are all kinds of fruits, vegetables and herbs, from the most common to the rarest varieties.
